Sulfur-Containing Compounds from Allium sativum L.
Garlic (Allium sativum L.) belongs to the family Liliaceae. It has been used worldwide and for long time as spice and folk medicine for the treatment of many diseases including infections and vascular disorders. From the liquid obtained by garlic cloves press, four sulfur-containing compounds were isolated. Their structures have been elucidated using MS and NMR spectroscopic methods to be ajoene (1), 2-vinyl-4H-1,3-dithiine (2), diallyl trisulfide (3) and methyl allyl trisulfide (4).
