FATTY ACID ANALYSIS OF SEEDS FROM HYLOCEREUS POLYRHIZUS (RED DRAGON FRUIT) GROWN IN BINH THUAN PROVINCE

Summary

Fatty Acid Analysis of Seeds from Hylocereus polyrhizus (Red Dragon Fruit) 

Grown in Binh Thuan Province

Hylocereus polyrhyzus seeds were isolated from its fruits using Viscozyme-L. The Hylocereus polyrhyzus seed oil was then extracted and qualitatively and quantitatively analyzed by GC-MS. Physicochemical properties of these fatty acids were also assessed in the study. The results showed that linoleic, oleic and palmitic acids, expressed in methyl ester, are found to be major components of Hylocereus polyrhyzus seed oil accounted for 44.89%, 22.44% and 21.75%, respectively. Unsaponification matter and acid index are found to be high as compared to those of other oils.
