\n\tMethod of Fermentation with Proteinase Producing Bacteria for Extraction of Chitin from Shrimp Shells
\n\tThe procedure for isolation of chitin from shrimp shells by using proteinases producing bacteria is the second bioprocessing method, which we applied in preparation of chitin. This method is enzyme-processing method including following steps: (1) fermentation of shrimp shells with proteinases producing bacteria (for removal of proteins), (2) removal of minerals by acid (HCl), (3) further removal of tightly bound protein by 2% alkali (NaOH), and (4) removal of pigments by KMnO4 and oxalic acid.
\n\tThis new bioprocessing method is thought to be more useful than the similar lactic fermentation method and can be a routine chemical method for isolation chitin from shrimp shells.
